Recipe of the Week: Lime-Glazed Cornish Hens, by J.Y.

Ingredients:

  • 4 to 5 Cornish game hens
  • 1 (8 oz) package stuffing mix
  • 1/4 cup melted butter
  • 2 tbs brown sugar
  • 2 tbs lime juice
  • 2 tbs dry white wine
  • 2 tsp soy sauce

Directions:

  1. Thaw hens, if frozen.
  2. Follow directions for stuffing mix.
  3. Spoon stuffing into the cavity of each hen.
  4. Mix butter with sugar, lime juice, wine, and soy sauce. Brush hens with this sauce.
  5. Place a trivet in the bottom of a pot.
  6. For 3 1/2 quart pot, plane hens on end, neck end down.
  7. Cover and cook on low for 5 to 7 hours.
  8. Brush with sauce once during cooking if possible.

Makes 4 to 5 servings.

  1. I love cornish game hens in my dutch oven at hunting camp. I like to use my home made Apricot jam to glaze them with occasionally. Sometimes I add a bit of Tabasco chipotle to the jam before the glaze, which will almost make you eat your fingers if you get it on them while eating the hens with your hands.
