I love cornish game hens in my dutch oven at hunting camp. I like to use my home made Apricot jam to glaze them with occasionally. Sometimes I add a bit of Tabasco chipotle to the jam before the glaze, which will almost make you eat your fingers if you get it on them while eating the hens with your hands.
