Recipe of the Week: Biscochitos, by T.R.

This is one of our favorite holiday cookies here in northern New Mexico. The traditional shape in this area is a simple disk about 1 1/2 inches in diameter, but you can use your cookie cutters if you want to.

Ingredients:

  • 6 cups all-purpose flour
  • 1 tbs baking powder
  • 1/4 tsp salt
  • 2 cups lard
  • 1 1/2 cups white sugar
  • 2 tsp anise seed
  • 2 eggs
  • 1/4 cup brandy
  • 1/4 cup white sugar
  • 1 tbs ground cinnamon

Directions:

  1. Preheat oven to 350 degrees F.
  2. Sift the flour, baking powder and salt into a bowl and set aside.
  3. In a large bowl, cream together the lard and 1 1/2 cups sugar until smooth. Mix in the anise seed and beat until fluffy.
  4. Stir in the eggs one at a time and then add the sifted ingredients. finally, add the brandy and stir until well blended.
  5. On a floured surface, roll the dough out to 1/4 inch thickness and cut into the desired shapes.
  6. Place the cookies onto baking sheets.
  7. Mix the remaining sugar and cinnamon together and sprinkle over the tops of the cookies.
  8. Bake for 10 minutes or until the bottoms are lightly browned.
