- 3 tomatoes
- 4 to 6 eggs
- 1 Tablespoon butter
- Peel tomatoes, remove the seeds and cut into dice.
- Sauté the tomatoes in a Iittle butter or butter substitute, until tender.
- Make the omelet in the usual way, first stirring the tomato into the beaten egg.
