Recipe of the Week: Tomato Omelet

The following recipe is for Tomato Omelet is from The New Butterick Cook Book, by Flora Rose, co-head of the School of Home Economics at Cornell University. It was published in 1924. Ingredients
  • 3 tomatoes
  • 4 to 6 eggs
  • 1 Tablespoon butter
  • Seasonings
Directions
  1. Peel tomatoes, remove the seeds and cut into dice.
  2. Sauté the tomatoes in a Iittle butter or butter substitute, until tender.
  3. Make the omelet in the usual way, first stirring the tomato into the beaten egg.
