Recipe of the Week: Potato Turkey Stuffing

The following recipe for Potato Turkey Stuffing is from The New Butterick Cook Book, by Flora Rose, co-head of the School of Home Economics at Cornell University. It was published in 1924. Ingredients
  • 2 cups hot mashed potato
  • 1 cup bread-crumbs
  • 1/4 tablespoon salt
  • 1 teaspoon sage
  • 4 tablespoons melted butter or butter substitute
  • 2 tablespoons onion-juice
  • 1/2 teaspoon pepper
Directions
  1. Thoroughly mix the ingredients in the order given.
  2. It is best to stuff your washed turkey within a half hour and then get it in the oven immediately

We’ve not tried potato-based stuffing, but this does sound good!

One of our family favorites for stuffing is the combination of sourdough and pumpernickel with the other usual flavor favorites — onions and herbs!
