Recipe of the Week: Hobo Stew, by D.B.

There are a few variations of this recipe. Here’s mine. There’s a lot of food value in this recipe, and it’s ready in about 40 minutes.

Ingredients:

Directions:

  1. Brown meat, onions, garlic, bell pepper, and diced chiles for 10 minutes or so.
  2. Add Rotel and simmer for 10 minutes.
  3. Add beans and brown sugar. Simmer for 20 minutes. If you like it thicker, dissolve corn starch in cold water and add to mixture.
  4. Add salt, pepper, and hot sauce to suit.

This will make 6 to 8 servings and it’s better the next day.

Sounds like a nice recipe…the only thing I would change is to brown the meat separately using a little coconut oil or similar product then drain any fat. Saute the vegetables and add the meat back when they are softened a little. Add the chili’s afterward as they are already softened during the canning process.
